  1. Sift the rice flour, fine cornmeal, potato flour, xanthan gum and salt into a bowl and mix.
  2. Rub the butter into the dry ingredients.
  3. Mix the egg with the water and add to the dry ingredients a little at a time until you have a stiff dough - do not be tempted to add too much liquid.
  4. Gather the pastry into a ball with your hands. If it is too dry, add a little more liquid a few drops at a time.
  5. Place in the fridge for at least 30 mins. This is not an easy dough to work with so must be chilled before use.
  6. It is best to roll out the pastry between two sheets of greaseproof paper.
