- 2 tsp cinnamon
- 1 tsp baking powder
- ½ cup butter
- 1 tsp baking soda
- ½ tsp cloves
- 2 eggs
- 1 cup Brown Sugar
- 1 tsp salt
- 1 cup pumpkin
- 1 ½ cup plain flour
- ½ tsp ginger
Servings: loaf
Instructions
- Cream sugar and butter together in a large mixing bowl.
- Beat in eggs and pumpkin until light. Stir in dry ingredients until well blended.
- Bake in greased / non-stick pan for 45 minutes.
- Cool for 15 minutes in pan, then turn out onto a cooling rack and allow to cool .
