- 12 ozs of Plain Flour
- 6 ozs Beef or Vegetable Suet
- 3 tablespoons water mix to a stiff dough
- pinch salt omit if making a sweet pudding
- pinch pepper omit if making a sweet pudding

Instructions
- Place flour, seasoning and suet into a largish bowel
- Mix to a stiff paste with the cold water adding a little at a time.
- Turn out onto a slightly floured board and knead for a few minutes to bring all the ingredients together.
Recipe Notes
Suet pastry can be used to make both sweet and savoury dishes. Omit the seasoning if you are making a sweet pudding.
Suet pastry takes very little time to make but if you are making a true suet pudding, you will need to allow 2.5 hours cooking time as, once covered, this pudding is steamed over boiling water.
This is the same recipe that is used to make dumplings. Try adding some dried sage to the mix.
