- 75 g rice flour
- 75 g cornmeal
- 75 g potato flour
- 1 tsp xanthan gum heaped
- pinch salt
- 150 g butter
- 1 egg
- 12 tablespoon water

- Sift the rice flour, fine cornmeal, potato flour, xanthan gum and salt into a bowl and mix.
- Rub the butter into the dry ingredients.
- Mix the egg with the water and add to the dry ingredients a little at a time until you have a stiff dough - do not be tempted to add too much liquid.
- Gather the pastry into a ball with your hands. If it is too dry, add a little more liquid a few drops at a time.
- Place in the fridge for at least 30 mins. This is not an easy dough to work with so must be chilled before use.
- It is best to roll out the pastry between two sheets of greaseproof paper.
