- Preheat oven to 200c
- Wrap each potato in aluminum foil and place it in the oven for 40 min.
- Take the potatoes out and open up the foil on one side and cut open the potato length wise. Then with a small spoon hollow out the core.
- Cut the goat cheese in small pieces and put them in the hollowed out core of the potato.
- Break one egg into each hollowed out core.
- Dice the spring onions finely and sprinkle them on top of the gap of the potato
- Put the potatoes back into the oven for another 20 min.
- Best eaten with a spoon!
